Yes tech people tend to fixate on things like dithering, PWM etc, but overall people understand - they have multiple screens and one screen causes eye strain, another does not.

Yes, they are not medical professional, but legally speaking they have a "duty of care", this is a legal term. And this is due to their significance and ability to cause harm by shipping hardware without prior testing and / or consulting with medical professionals. Besides, Apple is one of those companies that prides itself as "human machine" interaction design professionals, and screen is the biggest sensing factor at human side.
"Third, you are under no obligation to use an Apple product." - Speaking from market economies, this is valid statement. But we are in the situation if duapoly, where pretty much two major companies run the show. There are alternatives, but those are not realistic, especially if you are using specific applications, or interacting with specific devices. So the idea that there is a choice, is not entirely valid. These companies are so big that have totally different standard and duty of care towards society.

They don't care about us." - Well, again, I was part this number too, until I developed severe eye strain condition and sensitivity to flicker, higher then ever before. Many people to my conviction did not develop severe enough neurological impact, to develop a condition where they start to sense and perceive severeness of it. Also, Apple is one of those companies that prides itself on serving all people including minorities. Their software development ethos is all about accessibility, tailoring software to people who might otherwise be underserved. So it is well in line with Apples values. Besides, I remember writing long letters to apple, asking for matte display option. And guess what - we have it now on M4. ITs not cheap add-on due to a need to do custom config, but there is an option at least.
So all in all, Apple is not some fried chicken food stand that cooks bad chicken and customers are free to go to the next one, and there are plenty of choices. No. Apple is more about having one highway road to reach your destination town which unfortunately has some bad cracks in it, and all the other roads are bumpy, without tarmac, full of potholes and sharp nails. Some chose to go hard way using rural roads, some achieve good success one day, and onother day some farmer drops on it accidently some s**t which he uses for compost, and road appears worse than highway. But highway has more rules, no farmer would ever drop any crap on it, etc etc. So we only need to ask local authorities to fix those cracs, so we could go on a highway fast 🙂
