Might be worthwhile trying to move to Linux. Linux distros have a plethora of desktop shells to choose from, and they are fantastically more configurable than anything Windows has ever offered. Mint with the Cinnamon desktop has some pretty fine grain controls around dithering, RGB values, you can change the direction of anti aliasing, it's really configurable.
Then from there set up a VirtualBox and install Windows on it, and you would be all set. You can set up your windows applications for seemless virtualization, so when you click the icon on your linux desktop, it fires up Windows in the background and displays the program on your Linux desktop. This would give you complete control over the visual layer of your user interface. And you can easily backup the virtual HD so rolling back any Windows changes would take a few seconds at most.
I'm looking at trying it myself, I'm going to set up Lubuntu on a spare HDD (you can get 1TB sata drives for less than $50) and then virtualize Windows 7 and go from there. In the past I have found that the XFCE desktop causes me no problems. Might be worth playing with in your spare time so you at least have an option. You can rest assured Microsoft is NOT going to stop auto updating Windows 10 or pushing out changes without your consent or testing. Thats just working with a time bomb in my opinion. I'm an absolute Linux noob and even I can stumble along to an install and getting a VM set up, and then you are just in Windows running on Linux
